Homemade granola

Homemade peanut butter almond granola. Yes. You are going to love me.

I finally made homemade granola. I went to the farmers market on Saturday and there is a booth of homemade granola I pass every time and get a sample cup! It’s to die for! But I’m not about to pay $11.00 for a bag.

Solution: make my own.

Here ya go:

Ingredients:

  • 2 tbs creamy peanut butter
  • 2 tbs honey
  • 1/4 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1 cup oats (I used instant, not old-fashioned)
  • a handful of almonds (if you like them)

(forgot the cinnamon in the pic! oops!)

Step 1: Pre-heat oven to 325. Lightly spray a pan with non stick cooking spray.

Step 2: Combine peanut butter and honey in a bowl. Microwave about 20 seconds to melt the peanut butter and get as creamy consistency. (pic below)

Step 3: Add the vanilla and cinnamon and mix.

Step 4: Add the oats and almonds and mix until covered. (it will seem a little dry, but that’s what you want)

Step 5: Spread on pan and bake for 7-8 minutes. Let cool completely before storing in airtight container.

YUMM! My next batch I am going to use PB2 rather than peanut butter since its lower calorie.

Granola is delicious but always remember to watch your serving size because the calories add up quick! Luckily all you need is about 1/4 cup since it’s so filling.
