I made my first batch of onion rings recently. I baked them instead of deep-fried them since it’s healthier. They were delicious!!! Read on.
- 1/2 to 1 cup buttermilk
- 2 tbs flour
- 1 onion
- 6 tbs crushed corn flakes cereal
- 6 tbs seasoned bread crumbs
- 4 tsp cornmeal
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- Cayenne pepper
- 1/4 tsp Salt & Pepper
Step One: Pre-heat oven to 400 deg. Coat wire rack with cooking spray and place on top of a backing sheet.
Step Two: Turn the onion on its side and slice 1/2 to 1 inch thick.
Step Three: Combine corn flakes, breadcrumbs, cornmeal, garlic powder, onion powder, salt, pepper and cayenne. Mix together.
Step Four: In a separate bowl, combine buttermilk whisking in the flour. Whisk until smooth.
Step Five: Dip each onion slice into the buttermilk mix to coat, then dip into the dry mix. Coat completely and place on wire rack. Repeat for each onion slice.
Step Six: Spray onions with cooking spray to hold the crumbs in place.
Step Seven: Bake for 10 minutes, flip and then bake for an additional 10-12 minutes.
