Skinny Baked Chicken Nuggets

Chicken nuggets. It’s an all american food. Really.

I love chicken nuggets so I wanted to share a recent recipe I tried for a healthy (non-frozen) baked version of the kid-friendly, adult loving, American classic….chicken nuggets.

  • 3 cups (or so) of corn flakes
  • Grated parmesan cheese (about 1/3-1/2 cup)
  • 1 lb of boneless chicken breasts
  • 1/4 cup of flour
  • 2 eggs, beaten
  • 1/2 tsp salt
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • pinch of black pepper

Step 1: Cut your chicken into bite size pieces

Step 2: Put your corn flakes into a plastic bag and crush

Step 3: Pour the crushed corn flakes into medium bowl and add the parm cheese, salt, onion and garlic powder and pepper. Mix.

Step 4: Place beaten eggs into separate bowl

Step 5: Place flour into a third bowl

Step 6: To coat the chicken bites: dip chicken first in the flour, then in the egg and lastly in the corn flake mix. Place onto a greased cookie sheet (repeat for remaining chicken)

Step 7: Spray lightly with cooking spray (to hole the corn flakes in place)

Step 8: Bake for 12-15 min at 425 degrees
