Just a fun way to spice up your veggies, (literally and figuratively). Let’s be honest, veggies can get old. I feel like all I ever do is steam them or eat them raw. Here is a quick and super easy recipe I tried recently. I love zucchini anyway, but added some spices to kick it up a notch.
Cut a zucchini in rounds or strips, which ever you prefer. Heat a skillet over medium and spray lightly with olive oil cooking spray.
Shake on your spices and roast. Flip the zucchini every 5 mins (until you reach your desired softness). I don’t like them mushy so mine were ready after 10 mins. Make sure you put the spices on both sides!
The spices I used: garlic salt, onion powder, oregano, basil, pepper and a dash of chili powder.
They were a fabulous side! And so simple!
