Apple Fritters

I’m not going to pretend this is a “healthy” recipe. But sometimes you have to live a little.

As one twitter friend stated “they’re healthy, right… They have fruit in them” @fitnessjenm I love her mindset.

My friend Tara made these a month or so back and I thoroughly enjoyed them so of course, I asked for the recipe (and changed it just a bit). Thanks Tara!

Ingredients

  • 1 beaten egg
  • 1 cup milk
  • 1 1/2 cup finely chopped apple
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 3 tbsp orange juice
  • 1/2 tsp vanilla
  • 2 cups flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon

Step 1: Mix the flour and baking powder in a bowl and set aside

Step 2: Mix the remainder ingredients in a separate bowl (below)

Step 3: Fold the flour mix to the apple mix. Mix just enough to blend. Don’t over mix. (Below)

3Step 4: Heat oil to 350 degrees (I used canola oil)

Step 5:  Drop spoon fulls into oil and fry until golden brown (Below)

4Step 6: Let cool and roll in cinnamon sugar
