Chicken Pie – Healthier Version..Kind-Of

You know those people who say they want chicken pie…but without the veggies? Yeah, I’m NOT one of them. Sorry to hate…but really? Chicken pie is not chicken pie without the veggies.

Sorry for the rant.

I made chicken pie this week. It was ahhmazing. Also, my first time making it. Here you go.


  • box of pie crusts
  • 1/3 c. unsalted butter
  • 3/4 c. chopped white onion
  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. milk
  • 15 oz. chicken broth
  • 16 oz. mixed veggies (corn, peas, carrots)
  • 1 lb. cooked and shredded chicken

Step 1: In one medium sauce pan melt butter. Add onions and cook 3-4 minutes. Add salt, pepper, flour and stir. Add milk and chicken broth and stir until simmering. In another sauce pan cook frozen veggies to thaw.


Step 2: Add chicken and thawed veggies to the sauce mix.

CStep 3: Heat oven to 425 deg 

Step 4: Spray a casserole dish with cooking spray and lay one pie crust on bottom of pan.

BStep 5: Pour mixture into pan, cover with second pie crust and seal edges. Slit holes in center.

DStep 6: Bake 30-40 minutes until crust is golden brown.
