Thanks to SM I found this delicious skinny recipe.
- 1 box golden yellow cake mix (dry cake mix only)
- 1 – 14.5 oz can pumpkin
- 3 bananas, very ripe
- 2 egg whites
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/3 cup walnuts, chopped
- 2 – 8x4x2.5 inch loaf pans or 1 – 11 inch loaf pan (*size of the pans are very important)
Step 1: Mix together dry cake mix, pumpkin, egg whites, vanilla extract, cinnamon and pumpkin pie spice.
Step 2: Preheat oven to 350 deg
Step 3: Grease 2 (8 x 4 x 2.5) pans with non-stick cooking spray
Step 4: Fold walnuts into mix
Step 5: Transfer batter to pans
Step 6: Bake 35-40 min
So yummy! No joke, CJ and I ate BOTH loaves in a week.
