Cheesy Enchilada Egg Rolls

Like I stated in my Monday post .. these cheesy enchilada rolls had me at, well, cheesy.

They are so good. Here you go. All you need: (sorry the pictures are kind of dark)


  • 1 can of re-fried beans (you will have leftover)
  • 1 can enchilada sauce
  • Cheddar cheese sticks
  • Egg roll wrappers

Step 1: Cut cheese sticks in half, warm the refried beans in the microwave 30-60 seconds

Step 2: Start with an egg roll wrapper, put 1 tsp of enchilada sauce directly on roll

Step 3: Put one of the 1/2 cheese slices


Step 4: Put 1 TBS of beans

Step 5: Top with 1 tsp of enchilada sauce


Step 6: Roll and bind the edges with water

Step 7: Place on baking sheet


Step 8: Bake 10-12 mins at 400 deg until done


That’s it. These are so yummy. We ate all of them. They are also good dipped in a little hot/wing sauce 🙂
