Cheesy Enchiladas

CJ and I could eat Mexican food 7 out of 7 days and be completely content. Enchilada’s are our go-to since they are SO easy and so yummy. Plus, they make great leftovers.

I saw these on Skinny Mom and had to make them.

They did not disappoint



  • 8 low carb high fiber tortillas
  • 2x 10 oz cans of red enchilada sauce
  • 4oz green chilies
  • 1 jalapeno diced
  • white onion (about half-chopped)
  • 1/2 cup low-fat cottage cheese
  • 1/2 cup part-skim ricotta cheese
  • 1 cup reduced-fat mexi blend shredded cheese


Step 1: Combine cottage, ricotta and half of the shredded cheese, green chilies, white onion and jalapeno in a bowl and mix

Step 2: Pour one can of enchilada sauce on bottom of baking dish


Step 3: Roll out a tortilla and fill with 1/4 cup of the mixture. Roll and place in baking dish (seam side down)

Step 4: Top with the other can of enchilada sauce



Step 5: Bake at 350 deg for 15 min

Step 6: Remove, cover with the rest of the shredded cheese and bake an additional 10 minutes. (Or until cheese is melted)
