Parmesan Roasted Red Potatoes
The perfect side dish. Or main dish if you love carbs like me.
- 4-5 red potatoes (depending on the size)
- 1/3 cup Parmesan cheese
- Salt & Pepper
- Olive oil
- 1 tbs butter
Step 1: Half or quarter the potatoes. I quartered mine because they were rather large
Step 2: Preheat oven to 400 deg
Step 3: Put potatoes, thyme, basil, oregano, salt & pepper and Parmesan into a bowl
Step 4: Drizzle with olive oil and mix
Step 5: Lay on a slightly greased cooking sheet
Step 6: Bake at 400 deg for 25-30 min. (until you can poke with a fork easily)
Step 7: Remove, place back into the bowl and add the butter. Mix well until butter is melted. Add more Parmesan if wanted and serve.
