Healthy Baked Chicken Fajitas

Here is an easy and delicious recipe for you. I eat it without tortillas to keep it a low carb dish. It’s super yummy!

Baked Chicken Fajitas



  • bell peppers (yellow, green, red, orange) I use one of each
  • 1 onion
  • 2 chicken breasts (thawed and cut into cubes)
  • 1tbs olive oil
  • 1 can rotel
  • 1 1/2 tsp cumin
  • 2 tsp chili powder
  • 1/2 tsp oregano
  • 1/4 tsp season salt


1. Cut up all veggies

2. Mix all seasonings in separate bowl

3. Spray the bottom of a glass baking dish with cooking spray

4. Add cubed chicken

5. Add vegetables

6. Sprinkle seasoning on dish and mix

7. Drizzle olive oil on dish and mix


8. Pour the rotel into the dish and mix

9. Bake at 400 deg for 25 min (until chicken is cooked)


Serve with whatever floats your fancy. I just sprinkle a bit of cheese and a small scoop of sour cream. Feel free to put them in a tortilla and enjoy.
